This month, we’re delighted to welcome Léonie Bouchet as our TGC Muse — a creator, plant-forward chef, yoga teacher and founder of Racine, a creative culinary studio rooted in Melbourne. Originally from France, near the Swiss border, Léonie’s way of living has been shaped by mountains, seasons and a culture where movement, food and care are deeply intertwined — where beauty is found in both craft and nature.
Her approach to wellness is intuitive and layered, living at the intersection of food, movement and mind. For Léonie, wellbeing isn’t a checklist but a rhythm — listening to the body, honouring softness, creating space, and allowing time to do its quiet work. Whether she’s cooking, hosting, moving or simply stepping outside to breathe, her rituals are grounded in presence and intention.
She reflects a philosophy we hold close at The Gut Cø — that true wellness begins within, unfolds slowly, and is shaped as much by our inner world as the environments, people and moments we choose to surround ourselves with.
WHAT’S A WELLNESS MYTH YOU USED TO BELIEVE… AND WHAT CHANGED YOUR MIND?
There are many myths to debunk - especially when living between the worlds of culinary creation and movement. For a long time, I believed wellness was mostly about what you eat and how much you move, a checklist of “shoulds.” Moving to Australia shifted the cards completely. I felt my body composition change, my rhythm too and I realised that wellness begins much deeper. It starts in the gut, yes - but also in the mind, the environment, the people who surround us and the softness we allow ourselves. And as much as I love ticking boxes, wellness takes time - and it’s never linear.
WHAT’S ONE GUT FEELING YOU’VE FOLLOWED THAT TOTALLY CHANGED YOUR LIFE?
I try to follow my gut as much as possible - especially in work and collaboration environments where the energy can sometimes feel… off. My belly always reacts before my mind catches up: a tightening in my diaphragm, my throat shuts, a quiet ache whispering this isn’t good for you. Each time I finally listened and walked away, the universe responded - a call, a message, an unexpected encounter - gently confirming I had stepped back onto the right path. My intuition has always known, even when I doubted myself. I’m still learning to listen sooner, to give that inner voice space to speak, and to trust that first impression when someone feels either pure… or not.
WHAT’S A NON-NEGOTIABLE RITUAL YOU DO FOR YOUR BODY — EVEN WHEN LIFE GETS CHAOTIC?
Movement. Always. Yoga, training, pilates, cycling, running, hiking, being outside or even a simple walk - it brings me back into my body. If I don’t move, I stagnate; my mind, my body reminds me with little aches. When I can’t do a full session, a bit of stretching helps - and if I can’t even do that, which happens, well… I definitely feel it!
And meals - making or having the ones I truly want or need. It can completely shift my mood.
WHAT’S THE MOST UNDERRATED PART OF YOUR WELLNESS ROUTINE THAT ACTUALLY MAKES THE BIGGEST DIFFERENCE?
On a daily basis - no phone first thing in the morning, no notifications, no scrolling. And trying to step outside into the fresh air. It is underrated how much it clears the mind. Then comes hydration and small rituals - even though I’m sometimes the worst at it.
I’m very much a three-drinks-at-all-times type of girl: one to hydrate, one to function, one for pleasure. Tea has always been a quiet ritual for me, since childhood, a moment to pause after lunch, but especially after dinner - usually accompanied by a square of dark chocolate, that I swiftly dip in the cup to gently soften it, so I can linger a little longer in that moment.
On a bigger scale, making space. Pausing. Travelling. Letting my mind fill with something beyond the constant hum of everyday tasks and stress. Stepping outside just long enough to see more clearly again, to breathe, to reset and to feel present.
IF YOU COULD GO BACK AND GIVE YOUR YOUNGER SELF ONE PIECE OF ADVICE, WHAT WOULD IT BE?
Dare more. Trust your instincts. Know your worth — advice I would still give to myself today.
WHAT’S THE MOST SURPRISING CONNECTION YOU’VE DISCOVERED BETWEEN YOUR GUT AND HOW YOU FEEL MENTALLY OR EMOTIONALLY?
The most surprising connection I’ve discovered is how deeply the gut and emotions are intertwined. When I feel anxious, sleep less, or get caught in stress, my gut reacts first. Yet when I pause, breathe, create space, or simply better hydrate, it eases - a quiet reminder of how connected the body and mind truly are.

I feel most like myself when I create - when I encounter beauty, reconnect with nostalgia, cook something nourishing, move freely, host and share a moment with people who inspire me. It’s in those spaces that I feel both grounded and expansive.
