Method
1. Blend: Add the dried apricots, almond meal, Vanilla Protein, 2 cups desiccated coconut, and honey to a food processor or high-speed blender. Blend until the mixture is well combined and sticky, scraping down the sides as needed.
2. Roll: Scoop tablespoon-sized portions and roll into smooth balls using lightly damp hands.
3. Coat: Roll each ball in the remaining desiccated coconut until evenly coated.
4. Chill: Place in the fridge for at least 30 minutes to firm up before serving.
