Ingredients

Dry ingredients:

  • ½ cup almond meal

  • ¾ cup gluten-free 1:1 baking flour (we love Bob’s Red Mill)

  • ¼ cup cacao powder (unsweetened)

  • 1 tsp gluten-free baking powder

  • 2 tbsp FEED Powder {The Gut Cø}

Wet ingredients:

  • 4 large eggs

  • ½ cup melted coconut oil

  • 1 tsp vanilla extract
  • ¼ cup maple syrup

  • 1 cup grated beetroot

Optional: a handful of chopped walnuts for crunch

Method

  1. Preheat your oven to 180°C (350°F) and line a baking tray or cake tin with parchment paper.

  2. In a mixing bowl, whisk together all the dry ingredients using a fork.

  3. In a separate bowl, combine the wet ingredients and grated beetroot.

  4. Pour the wet mixture into the dry and stir until fully combined.

  5. Pour the batter into your prepared tray and bake for 25–30 minutes, or until a toothpick inserted comes out clean.

  6. Allow to cool slightly before slicing. Enjoy warm or chilled!
