The recipe makes 3 pancakes.
Ingredients:
1 chia egg - to make the chia egg, combine 1 tsp chia seeds with a little bit of water and refrigerate for 10min.
1 mashed banana
2 tbsp VEGAN PROTEIN Vanilla
1 tsp baking powder
1 tsp of cinnamon
1 cup of flour or almond meal
1/2 cup of plant-based milk, +/- depending on if you like your pancakes thicker or thinner.
Your choice of oil or plant based butter to cook.
Berries and walnuts to top.
Method:
1. Combine all dry ingredients into a mixing bowl.
2. Add all wet ingredients to the dry and combine. Add more milk as needed to create your desired texture.
3. Add your fry pan to the stove and heat up to medium-high heat. Add your oil or plant based butter and pour your first pancake, once you flip your first pancake, reduce heat to medium and continue to cook pancakes until there is no more mixture.
4. Add your berries with a dash of water to a pot on the stove and cook until berries become soft and more saucy.
4. Stack your pancakes, drizzle your berries on and top with walnuts - enjoy!
