Ellie's Vanilla, Fig & Maple Granola

There’s nothing quite like the smell of granola baking in the oven on a crisp autumn morning. This Vanilla, Fig & Maple Granola is a delightful blend of cosy spices, crunchy nuts, and a protein-packed base to keep you energised throughout the day. It’s gluten-free, refined sugar-free, and full of fibre, healthy fats, and gut-loving nutrients.
We’ve added Vanilla PROTEIN {collagen + WPI} to give it an extra boost — supporting muscle recovery, skin and joint health, and helping you stay full longer.

Ingredients:
- 1/2 cup quinoa puffs
- 1–2 cups of mixed nuts (we used almonds, macadamias, brazil nuts, cashews and pecans)
- 1/4 cup shredded coconut
- 3 tbsp Vanilla PROTEIN {collagen + WPI}
- 1 tsp cinnamon
- Pinch of salt
- 1/4 cup coconut oil
- 3 tbsp maple syrup (or natural sweetener of your choice)
- 2 tbsp hemp seeds
- 1 cup chopped dried figs
Directions:
- Preheat oven to 180°C and line a baking tray.
- In a large bowl, combine quinoa puffs, nuts, shredded coconut, protein powder, cinnamon, and salt.
- Melt coconut oil with maple syrup, then pour over dry ingredients and stir well to coat.
- Spread mixture evenly on the tray and bake for 15 minutes or until golden brown.
- Let it cool completely. Once cooled, mix in the chopped figs and hemp seeds.
- Store in an airtight jar and enjoy with your favourite milk, yoghurt, or just by the handful.
Pro Tip: We love this granola with coconut yoghurt, a drizzle of almond butter, and some seasonal fruit — but it’s just as delicious on its own as a snack.
